Batatawada (Kachori)

Makes 36 vadas

Ingredients

Potatoes: 9 medium, boiled and mashed well

Grated coconut (fresh): ½ cover scraped (~3-4 tbsp)

Lime juice:  3 big

Sugar: 3 tbsp

Salt: 1½ tsp

Grated ginger (adrak): approx 3 tbsp

Green chili paste: 20 spicy chilies

Cilantro (kothmir) leaves only: 2-3 tbsp, chopped fine

(variation: 8 big potatoes, 4 lime juice, 2 tbsp adrak paste, 20 green chilies, 5 tbsp sugar, salt, cilantro)

 

Tempering (baghar): 4 tbsp oil, 1 tsp rye, 2 stems of curry leaves (kadhi patta)

Batter: I cup chickpea flour(besan), salt and a pinch of baking soda (soda khaar)

Method

Mix all the ingredients and temper.  Make balls (vadas).  Dip the vadas in the batter, which should not be thick i.e. batter should be a thin cover oon the potato balls (vadas).  Fry over slow fire till golden. Serve with spicy ketchup and green cilantro chutney or imli-gud chutney and green cilantro chutney.
