Yellow Alu
Serves 4-6 people
Ingredients
Potatoes 3 big
Green chili paste 2 tbsp full (approx. 15)
Curry leaves (Kadhi patta) 2-3 stems (daakhli)
Whole Cumin (Zeera) seeds 3-4 tsp
Haldi, salt, lime juice (half big lime)
Method
Boil the potatoes for 5-6 minutes in the pressure cooker, with 1½ tsp salt. Peel and cube. In a heavy-bottomed pan (kadhai), heat oil (1-2 maap). The potatoes can soak up oil, so be generous with the oil. Add zeera, green chilli paste and kadhi patta. When it smells, add potatoes. Sprinkle haldi and salt, if necessary, on the potatoes, and mix. Add lime juice to taste and fry a little more. Garnish with lots of kothmir.
Serve with puris.
