Red (Lasanwale) Alu

Ingredients
Potatoes 2 lbs, boiled and chopped into squares (add salt and haldi)
Lasan 1 tbsp (10 cloves)
Mustard (rye) seeds 1 tsp
Curry leaves 1-2 stems (daakhli)
Red chillies whole, crushed 10
Cumin (Zeera) powder 1 tsp
Coriander (Dhaniya) powder 1 tsp
Tamarind (Imli) pulp 1 lime equiv
Method
Add oil to a heavy-bottomed pan. When hot, add rye and kadhipatta. After the aroma of the baghaar rises, add prepared potatoes and toss gently together. Separately, fry the red chili and lasan paste. Add zeera and dhaniya zeera powders. Add to the potatoes. Finally add imli pulp. Adjust consistency and taste for salt. Do not overcook. Garnish with plenty of kothmir and few fresh kadhipatta leaves.
