White Roast
Serves 4 - 6 people
Ingredients
Chicken: 1 kg
GInger garlic (adrak-lasan): 1 tbsp
Onion: 1
Lime juice: ½ lime
Badam/Kaju: 25 grains
Coconut cream: 2½ tbsp (or 1½ tbsp coconut powder with water)
Green chili paste: 15 small to make 1 tbsp
Cloves, elaichi and shah zeera
Chopped cilantro (kothmir): 1 saucer
Oil/ghee: 2 maap
2 potatoes: 8-12 pieces
Method
Boil the chicken with adrak-lasan, salt and one whole onion. Once done, add lime juice. Remove the onion and make into paste. Fry potatoes light brown and keep aside. To the ghee/oil, add garam masala and onion paste. When transparent (do not brown), add green chili paste and kaju/badam paste (Note 1). Add chicken stock and coconut milk. Adjust consistency. Add potatoes and keep boiling. Then add chicken pieces and cook till done.
Garnish with kothmir.
Serve with bread, white rice.
Notes:
For easy cooking, grind onions, cashews and green chillies together after removing onion from boiled chicken.
