Cheese Kothmir Chicken

Serves 4 - 6 people

Ingredients

Chicken:  1½ kg

GInger garlic (adrak-lasan):  2 full tsp

Green chili paste: 5 small to make 1 tsp

Onion:  1

Dairy Rich cheese cubes: 4 ~ 80-100 gms

Butter/ghee: 100 gms

Cornstarch: 2 tsp

Fresh cream (malai): 100 gms

Black pepper powder, generous amount

Cloves, elaichi and shah zeera

Chopped cilantro (kothmir) leaves:  1 saucer

Oil/ghee: 2 maap

2 potatoes: 8-12 pieces

Method

Boil the chicken with adrak-lasan, green chillies and salt (put less salt to accomodate salt in the cheese). Grate cheese if needed. Fry the cheese in butter, add cornstarch mixed with water to make a paste, and add cream to make a white lump-free sauce base.  Add boiled chicken with stock, pepper and garnish with cilantro leaves.

Optionally, you may add boiled eggs.

Serve with bread, white rice..
