Goshtwala Chawal

Mutton                                   200 gms

Adrak-lasan                          1 tsp

Turmeric (haldi) a pinch

Potato                           2 medium sized (6-8 pieces), fried

Onion                                      1 medium, chopped very fine

Green chillies                         5 small or 8 big, crushed

Whole garam masala          1 tsp

Zeera and Shahzeera           ¼ teaspoon each

Dahi                                        ½ cup, beaten

Coconut milk                          ¼ cup

Lime juice                               1 whole

Rice                                         2 cups

 

Method

Boil the cleaned mutton with adrak lasan paste, haldi and salt. Use 1-1 ½ maap ghee to fry potatoes.  Keep them aside.  Fry onions with green chillies, garam masala, zeera and shahzeera till transparent. Add boiled mutton (no stock at this point) and potatoes.  Add the beaten dahi, coconut milk and salt.  Check the mixture for salt and spice.  Then add washed rice and 3 cups of liquid (remaining stock and water).  Cook till rice is done.

Optionally, you can add ¼ cup boiled yellow split peas (chane ki daal) (boil with haldi and salt) to this rice, per your preference.
