Kolbiwala Chawal (Shrimp rice)

Shrimp                                   14-16 medium, peeled and deveined

Adrak-lasan                          1 tsp

Turmeric (haldi) a pinch

Potato                                     2, medium sized (6-8 pieces), fried

Onion                                      1 medium, chopped very fine

Green chillies                         5 small or 8 big, crushed

Whole garam masala          1 tsp

Zeera and Shahzeera           ¼ teaspoon each

Dahi                                        ½ cup, beaten

Coconut milk                          ¼ cup

Lime juice                               1 whole

Rice                                         2 cups

 

Method

Use 1-1 ½ maap ghee to fry potatoes.  Keep them aside.  Fry onions with green chillies, garam masala, zeera and shahzeera till transparent. Add the shrimp and cook till they are completely pink (you can also pre-cook the shrimp in a pressure cooker, with salt and ginger garlic paste for 3 minutes after the whistle) and potatoes.  Add the beaten dahi, coconut milk and salt.  Check the mixture for salt and spice.  Then add washed rice and 3 cups of water.  Bring to a boil. Put on dum (see note) till it done.

 

Note: Tightly cover with a weighted lid and cook on slow flame
