Cutlets

Ingredients

Ground beef (kheema): 500 gms

Yellow split peas (Chana daal): ½ cup

GInger (adrak) paste: 1 tsp

Garlic (lasan) paste: 1 tsp

Red chilis: 4-10 depending on spice level

Green chilies: 4-8 depending on spice level

Potato: ½ medium

Onion: ½ chopped v fine

Cilantro (kothmir), Salt to taste

Directions

Cook in pressure cooker for ½ hr.  If water remains, dry without stirring.  Cool.  Grind in chopper and add kothmir, phudina chopped fine.  Add egg and shallow fry in non-stick pan.

Ingredients

Kheema (beef): ½ kg or mutton

Ginger (adrak): 1 piece

Garlic (lasan): 1 pod

Green chillies: 4-6 whole

Yellow split peas (chana daal): 1 muthi, soaked in water before hand

Onion: 1 small whole

Potato: 1 small whole

Salt

Taj, lavang, elaichi and kali miri whole

Method

Boil in pressure cooker with ½ cup water.  After 3 whistles, keep for 15 minutes on medium fire.  Then put in mixer and grind.  Should not be pasty, just coarse.  Add kothmir, phudina, green chillies chopped fine, I small onion chopped fine and egg (optional).  Shallow fry or make tikki and grill with very little oil on non-stick pan.
